Healthy, hearty breakfast sandwich

My favorite go-to healthy breakfast when I have a few extra minutes to spare in the morning!

Ingredients:
-Wheat bread
-Tomato slices
-Avocado slices
-1 Egg fried in a teeny bit of olive oil + black pepper (no salt)
– 1 slice of ham (optional)
– 1tsp mayo (optional)
The only real cooking involved is the egg frying – everything else is just slicing, then putting together your sandwich the way you want it.

Tip:
I like to leave the egg a bit undercooked so that the yolk explodes all over the sandwich when you bite down. It makes the sandwich more moist and chewy. 🙂

And as always, a cup of tea makes everything better! My current favorite: black tea w/ a bit of milk.
