Chicken & Shrimp Stir-fried Rice

* Heat 1 tbsp olive oil in pan.
* Throw in some frozen mixed veggies (or whatever veggies you like).
* Add 1 chicken breast (4 oz) – I just hold it with small tongs in one hand and cut the chicken into small pieces with kitchen scissors.
* Add some salt & pepper
* When the chicken is almost done, throw in a handful of frozen shrimp.
* Sitr for another minute or two, then add 2 tbsp soy sauce.
* Add 1 cup cooked brown rice, stir.
* Sprinkle some curry powder, mix in for a couple more minutes.

Makes 2 servings, 330 calories per serving.
